During WWII, when coffee vanished from Finnish shelves, many turned to chaga, a birch-growing fungus used in traditional folk medicine. Brewed into a dark, earthy tea, it became a practical coffee substitute. Today, chaga is making a quiet comeback. As a lifelong mushroom lover and non coffee drinker, I enjoy chaga as part of my nightly routine.
